Ingredients
  • 1 ripe avocado
  • 1 egg
  • 6 rashers of bacon
  • Salt & pepper

 

Method:

  • Preheat the oven to 180°C.
  • Cut the avocado in half and remove the stone.
  • Using a spoon, carefully remove the avocado halves from their skin. 
  • Layer three bacon rashers into the empty avocado skins.
  • Replace the avocado halves into the skins, over the layer of bacon.
  • Crack the eggs over a mixing bowl, carefully draining the whites from the yolks.
  • Place the yolks into the centres of the avocado halves.
  • Season with salt and pepper.
  • Fold the ends of the bacon rashers up over the avocado, covering the egg yolks.
  • Oven bake for 25 minutes.
  • Serve immediately
