2 x 150g chicken breasts
4 rashers bacon
Filling of your choice
This recipe is very versatile and you can stuff the chicken if you wish. I like taking sausage meat out of it's casing and placing in the chicken before wrapping, but you can also stuff with feta & spinach, ham & cheese or anything you choose!
Place the chicken breasts, one at a time, in a freezer bag and pound until flattened and about 1 inch thick. Stuff with filling of your choice. Lay out 2 pieces of foil and place 2 strips bacon side by side on the foil. Place the chicken on top then roll up and wrap in foil. Bake for 30 minutes until cooked through and serve with roasted vegetables, a large salad or low carb dish of your choice.
