Delicious as a starter, side dish or snack

1/2 aubergine, sliced

Salt & pepper

1 egg, lightly beaten

1 tbsp chopped basil

50g grated cheese

20g grated parmesan

3 finely sliced mushrooms

5 chopped cherry tomatoes


Slice the aubergine and place on a greased baking tray and sprinkle with salt & pepper. Bake at 180C until browned. Meanwhile mix the other ingredients in a bowl. Remove aubergine from oven, turn over and sprinkle with more salt & pepper then grill again until still slightly firm (cooking too long will make it go soft). Remove from oven and brush each slice with the beaten egg. Top with the other ingredients and place back in oven until the cheese is melted.
