This low-carb pizza alternative is packed with flavour. Pile on your favourite pizza toppings for a tasty meal or a filling snack.

  • 3 tbsp of olive oil

    2 aubergines, sliced lengthways

    4 large tomatoes

    150g ball of mozzarella

    A handful of torn fresh basil leaves

  1. Heat the grill.
  2. Drizzle olive oil over the aubergine slices.
  3. Place the aubergine slices on a baking tray and grill lightly on both sides.
  4. Roughly chop the tomatoes and mozzarella and layer over the grilled aubergine slices with a sprinkling of finely chopped basil.
  5. Grill for a further 3-5 minutes or until the cheese bubbles.
