These cheese-topped cauliflower breadsticks have a satisfying crispiness, making them perfect with dips.

200g of cauliflower

50g of mozzarella

2 eggs

2 tsp of dried oregano

50g of grated cheese

1 tbsp of butter

Salt and pepper

  1. Preheat the oven to 180°C.
  2. Rice or grate the cauliflower into a large bowl.
  3. Heat the butter in a large frying pan and add the grated cauliflower.
  4. Stir regularly over the heat until the cauliflower begins to turn golden.
  5. Combine the eggs, cheese and herbs in a bowl and stir into the softened cauliflower.
  6. Transfer the whole mixture into a wide, flat baking tray. Flatten to ensure it is even throughout.
  7. Place the baking tray into the oven and bake until crispy.
  8. Remove from the oven and sprinkle cheese, salt and pepper over the top.
  9. Return to the oven and cook until the cheese melts.
  10. Slice evenly and serve hot with a selection of tasty dips – perfect with guacamole or a low-sugar salsa.
