A great low carb dish for entertaining, taking to parties, having as a snack or pairing with a salad for a lunch

  • 200g cauliflower
  • 50g mozzarella
  • 2 eggs
  • 2 tsp dried oregano
  • 50g grated cheese to top
  • salt & pepper
  • 1 garlic clove (this is optional)


Line a large baking sheet with parchment paper and cut the cauliflower roughly into florets.

Add the florets to your food processor and pulse until cauliflower resembles rice. Alternatively, you can rice the cauliflower using a box cheese grater.

Place the cauliflower in a microwavable container and cover with lid. Microwave for 2-3  minutes or you can make by frying in a knob of butter for a few minutes. Place the cauliflower in a large bowl and add the eggs, 40g of mozzarella, oregano, garlic and salt and pepper.

Mix everything together then shape into a large circle on the baking tray.

Bake the crust (no topping yet) for about 25 minutes or until nice and golden, on medium heat. Don't be afraid the crust is not soggy at all.

Once golden, sprinkle with grated cheese and put back in the oven for another 5 minutes or until cheese has melted then cut into breadsticks and serve.
