Fancy Indian cooking? This low-carb recipe for chicken Rogan Josh with cauliflower rice blends aromatic spices in a rich curry sauce.

  • 150 gram chicken breast with skin
  • 60ml chicken stock
  • ¼ onion
  • 1 teaspoon ground ginger
  • 1 clove(s) garlic
  • 2 tablespoon olive oil
  • 1 teaspoon spice turmeric ground
  • 2 teaspoon curry powder
  • 1 teaspoon chilli powder
  • 1 teaspoon cumin seed
  • 1 teaspoon fennel seed
  • 100 gram tinned diced tomatoes
  • 1/2 tablespoon tomato puree
  • 1 tablespoon fresh coriander
  • 1 teaspoon garam masala
  • 80 gram cauliflower


Add the chopped onion to a frying pan and cook for several minutes until softened. Make a paste of the ginger, garlic.puree, curry powder, Turmeric powder, Chilli powder, with a little water. Add to saucepan and stir in well and fry for a couple of minutes. Add the diced chicken and stir well to coat, add the chopped tomatoes.

Add the tomato puree in a jug with the stock and pour into the pan and mix well then simmer for 20 minutes, stirring occasionally. Finally sprinkle in the Garam masala and stir in well for the final 2 minutes of cooking. Garnish with the Roughly Chopped Coriander leaves and serve over the cauliflower rice

To make cauliflower rice, simply 'rice' cauliflower either using a cheese grater or in a food processor and then either microwave for a few minutes or saute in a little oil for about 5 minutes. Season and serve as you would rice.
