Craving that classic fried chicken taste? These succulent chicken tenders have all of the flavour but less of the carbs, making them a perfect dipping snack or salad topping.

  • 2 chicken breasts
  • 2 eggs
  • 3 tablespoons of ground almonds
  • ½ tablespoon of paprika
  • ½ tablespoon of cayenne pepper
  • ¼ teaspoon of garlic powder
  • ½ tablespoon of cumin
  • Salt & pepper
  • Olive oil


  1. Preheat the oven to 180°C.
  2. Slice the chicken breasts into thin slices.
  3. Pour olive oil onto a baking tray.
  4. Break the two eggs into a mixing bowl and whisk until the whites and the yolks are fully combined.
  5. Combine all dry ingredients in a separate bowl.
  6. Dip each chicken piece in the egg mixture, and then in the spice mixture to coat.
  7. Place on the oiled baking tray, and season with salt and pepper.
  8. Oven-bake for 25 minutes.
  9. Serve immediately with a dip of your choice, or enjoy cold with a salad.
