Great for a filling, healthy breakfast full of healthy fats

  • 1 egg
  • 1 portobello mushroom
  • 1/2 ripe avocado
  • herbs of your choice, such as coriander
  • salt 


Cut the stem out of a portobello mushroom and grill for a few minutes. Meanwhile, mash 1/2 avocado (add some chopped chill & coriander if you like). Poach an egg then place the grilled mushroom on a plate, top with guacamole and then the egg and sprinkle with herbs of your choice. You can make another version using homemade salsa instead of guacamole by mixing together 1/4 red chopped onion, 3 chopped cherry tomatoes, some chilli and salt.
