Tasty & low in carbs, this Thai Beef curry is a real treat!

  • 1 tbsp olive oil
  • 1 tbsp thai curry paste
  • 100ml coconut milk (unsweetened)
  • 115g beef, cut into strips
  • 100g cauliflower (riced)
  • 1 tbsp fresh coriander
  • 1 tsp lemon grass

Warm oil over low heat and add curry paste, stir for 5 mins and then add coconut milk, chopped red chilli pepper and any additional vegetables (of your choic such as pepper, mushrooms etc).. Cook and stir for 3 minutes. Add beef and bring to boil then lower to simmer for 1 1/2 - 2 hrs. Cook uncovered for further 10 mins until sauce thickens and serve garnished with coriander and lemongrass and serve over cauliflower rice.
