Peppers are colourful, tasty and perfect for stuffing – we’ve made these low-carb roasted peppers with turkey, tomato, and cheese.

2 peppers (halved)

100g of ground turkey

1 clove of garlic (crushed)

1 egg

100g of tinned tomatoes

30g of grated cheese

1 tsp of mixed herbs

1 tsp of onion powder

1 tsp of olive oil

  1. Mix the ground turkey, egg, garlic, mixed herbs and onion powder in a large bowl.
  2. Halve and deseed the peppers, then fill each pepper-half with the turkey mixture.
  3. Top the stuffed peppers with a spoonful of tinned tomatoes each.
  4. Sprinkle cheese on top and over-bake for 50 minutes.
