So easy to make and can be made ahead of time and take to work or on a journey. Can be made with anything you want to add, such as mushrooms, bacon, sausage, ham etc.

  • 6 eggs, beaten
  • 2 tbsp cream
  • 6 slices bacon, chopped
  • 50g grated cheese
  • 1 tbsp butter to grease
  • salt and pepper to taste



Preheat oven to 180C. Beat eggs, cream and salt & pepper then add grated cheese and stir to combine. Meanwhile fry the bacon, cut into small pieces, over medium heat. Add the bacon to the egg mixture then pour into greased muffin tins and place in oven until eggs are cooked through and it looks slightly browned and fluffy.  

You can substitute the bacon for chopped sausage, ham, tuna or veggies like chopped mushrooms, onion & red pepper. Or add different cheese, such as parmesan, blue cheese etc. Get creative!
