Preheat the oven. Thinly slice the mushrooms and garlic. Add, with salt & pepper, to a greased frying pan and sauté until soft, about 5 minutes. Grease a pie dish and place spinach in the bottom and top with mushrooms and feta. In a bowl, whisk together the eggs, milk, and Parmesan. Season lightly with pepper. Pour the egg mixture over the vegetables and feta in the pie dish and top with the grated mozzarella. Bake the crustless quiche for 45-55 minutes, or until the top is golden brown.
