Tasty & low in carbs, this meatball bake is a winner for all the family!
First make the meatballs by combining 115g of either minced beef or turkey with 1/3 finely chopped red onion and 1/3 chopped jalapeno and 1/2 tsp mixed herbs. Make into meatballs and set aside. In a frying pan, add 1 chopped spring onion, 1/2 chopped red pepper and 1 tbsp paprika and fry in 1 tbsp oil for a minute. Add the meatballs and brown. Transfer to a baking dish and cover with 1/2 tin chopped tomatoes. Bake for 30 minutes until meatballs cooked through
